Tips for the perfect barbecue!!

Now we give you tips to enjoy a perfect barbecue with friends and family, using your favorite Landmann grills!

Tip No.1: Never put the meat on the barbecue right after removing it from the fridge. It should not be frozen, so that you cook it quickly and turn it once in the middle of the cooking. Or else, it will be overcooked on the outside and will be raw in the inside.

Tip No.2: This advice concerns those using charcoal grills. If during the cooking is created intense fire, do not use water to calm the flames. Instead, prefer to drop a sufficient amount of coarse salt over the coals until the fire die down. Otherwise, you can spray the meat with a small amount of red wine.

Tip No.3: If you want the meat to be juicy, put salt on it just before you take it off the flames, or else the salt will absorb the meat juices. Furthermore, do not use a fork to turn the meat, because this way you make holes which allow the exit of the meat juices from the inside. For this purpose you can use tongs.

Tip No.4: Something very essential to make your meat tasty and juicy is the marinade, which makes the meat more tender and helps to retain its juices. We usually use acidic marinades with lemon juice, vinegar or wine. Acidic ingredients release the meat proteins, making its surface softer. Also essential is the oil we use in the marinade, as this is what prevents the food from drying out and enhances the flavor. You can also use some additional materials, such as garlic or ginger, depending on your tastes. After you make your marinade, baste the meat with it, wrap it in a film and leave for several hours. Then start cooking. You can baste the meat with the marinade during grilling as well. This helps the meat to maintain soft.

Tip No.5: The secret of good cooking lies in your grill lid. But how can you decide when to put the lid on? It is advised to use the lid in every barbecuing. Thanks to the lid, your food can be thoroughly cooked and maintain its moisture. That is because, by putting the lid on the grill, the heat is maintained during the whole time of cooking and is thoroughly transferred in the burning area. This way, the chances to burn the meat are reduced. But when the meat you cook is very thin, do not use the lid, because this way it will petrify on the outside and overcook in the inside, and that is something we do not want. So, in that case, it is better not to use the lid.

Tip No.6: Always clean the barbecue after using it. We know that it is hard and tedious to do so while you just want to sit and enjoy the fruits of your labor. The cleaning and care of your barbecue, however, is not just a matter of hygiene, but a matter of success of your next barbecue. Ie, the fats that have been on your grill from the previous barbecue, may now give a different taste to the meat, or even burn it on some spots, because of the flames. The right moment to clean your barbecue is right before it completely cools. This way you can remove the still liquid fats easier, without burning yourself. It will be harder to do so the next day, as the fats will be stabilized over the parts of the barbecue.

Tip No.7: You must always follow the general hygiene rules. For example, pay close attention to the cutting surfaces and your platters. Never use the same surface for raw and cooked meat. Bacteria in raw meat can cause damage to your health. You must also use different cutting boards for different types of meat (red meat, chicken, fish). And when you finish the cutting process, thoroughly clean your surfaces.

Tip No.8: During the barbecuing some of you may be over excited. So, do not hurry to finish the process by putting too much meat on the grill. This would give you bad results and the reason is this: When you leave a clear spot on the grill, and a little cooler than the rest surface, you create a “safe zone”. This means you can move the meat in case it is about to get burnt.

Tip No.9: The barbecue lovers tend to experiment in cooking styles and flavors, and so we recommend as well. Here's a way to make the perfect chicken, escaping from the ordinary. Coat the chicken with seasonings of your choice and use the Landmann chicken base (see barbecue accessories Landmann). After filling the base with the ingredients also of your choice (eg. orange juice), place the chicken on it. Then place it on the grill or on a pan and then on the grill. Close the lid and cook for about 1-1.30 hours. In the middle of cooking turn the chicken once. The result will be amazing!

Tip No.10: Barbecue lovers know very well that there are many accessories that someone can use to make their lives easier and the food tastier. How about an accessory that would make your food very tasty in less effort and time? Such an accessory is the barbecue salt rock by Landmann. This rock can be used for meat, fish or even vegetables and creates to your food a tasty crust with a slightly salted nuance. The only thing needed is to preheat the rock on the grill and then put the food on. The food does not have to be marinated, you can just put a little amount of oil before putting it on the rock. In a short time you will be able to enjoy a special dish that will keep all the juices and will have acquired the taste you want. Without much trouble, without wasting much time to marinade!

Tip No.11: You sure wish to eat juicy and soft meat. Here is something you should know to calculate your cooking times when you barbecue, so that you don’t overcook the meat. The food continues to cook even when it is out of the grill, so it is advisable to remove it from the heat just before it is done (depends on how much you want the food to be cooked and what kind of food you cook). The accessory that will help you to realize the right moment to remove the food from the heat is no other than the thermometer (See the Landmann barbecue accessories).

Tip No.12: You know that barbecues are not only for cooking meat and fish, right? You sure do. So you can grill vegetables as well, to accompany your dish. While you bake them, though, there is the possibility of some pieces to “slip” between the gaps of the grate. How can you avoid something like that? By grilling the vegetables on the plate. And if you don’t have a cooking plate, there is a simpler way: a pan! A pan or a basket resistant to the high temperatures that Landmann has made for this purpose! (See the Landmann barbecue accessories)

Tip No.13: The secrets for the whole family’s barbecue enjoyment are many. But what happens when we want to grill burgers? How can we give them the perfect shape so that they won’t be ruined? Landmann took care and made the Burger Maker, an accessory that will help you make the most well-shaped burgers you have ever made. Just place the meat in the container, push down the lid so that you remove the excess meat and it’s ready! Remove the burger from the container and repeat as many times as you want. For the most demanding, Landmann created the American Burger Set, an accessory that will help you make staffed burgers. The process is once again simple: Put a layer of meat, press down the lid until you create a puddle, fill the puddle with your favorite ingredients, cover with a second layer of meat and press one last time with the lid (the other side) to unite the two layers.(For the accessories, see Landmann barbecue accessories)

Tip No.14: BBQ is a pleasure, and some of us would like to grill in any chance. In the morning, at noon, in the evening, in bright or shadowy places. But, what happens when the light is not enough? Postpone grilling? Of course not! Landmann took care, and provides us convenient flashlights that can be mounted on our grill and make our barbecuing easier even in the evening. With the universal clamp for horizontal and vertical surfaces, and the flexible body, this flashlight can be adapted to each BBQ. (See Landmann Cooking Accessories)

Tip No.15: You want your food to have the taste and smell of smoked meat but you don’t have the smoker grill? There is a way and Landmann has taken care of this, too. The smoking planks LD13956 from cedar wood give the grilled food a mild smoky aroma and can be used several times. (See Landmann Cooking Accessories) Cedar wood is an excellent choice for salmon, seafood, beef and pork. The process is simple and is the following: Soak the plank in water for one hour before using it. Heat up the barbecue to about 150-180οC. Place the plank directly on the flame and heat it up until it starts to smoke. Then move the plank directly into the indirect grilling zone and place the food to be grilled on the plank.

Tip No.16: Grilling your fish seems difficult? Yes, a special treatment is needed, but if you follow some basic rules, you will eventually enjoy a delicacy! So, remember to put some oil on the fish by using a brush before you put it on the grill, and be sure to let some minutes to pass before you move it, as its meat is tender and may be ruined if it hasn’t a thin crust externally. Of course, if you want to avoid this kind of problems, Landmann has created racks exclusively for cooking fish (LD0283, LD0177, LD13430, see Landmann Cooking Accessories). Finally, as we have mentioned before, the food continues to cook even after its removal from the fire while it is still warm. The same happens with fish, so remember to remove them from the heat just before the final desired outcome.

Tip No.17: We know you love barbecuing, so do we. Do you, though, take enough care of your grill? Cleaning your equipment, as we have mentioned before, is important, but not enough to maintain your grill for years with its maximum return. You have to mind the storage, too. Be sure not to leave it exposed to rain and sun and store it in dry and shady places, and ALWAYS with a cover. So, remember to store your BBQ in right way when you don’t use it.

Tip No.18: We know you want to enjoy your grilled dishes as soon as possible. But you must not rush to put your food on the grill. You need to be patient. It is necessary to preheat your grill before placing the food on, whether you use charcoal or gas. Indicatively, if using charcoal grill, let the charcoal burn for at least 30 minutes before starting. If using a gas grill, turn it on about 15 minutes before starting cooking.

Tip No.19: Before you begin cooking make sure you have beside you all the necessary tools. Tongs, clips, utensils, aprons, gloves and everything you need during grilling. If you leave the food without supervision to look for the accessories, the food will may be burnt. The side and bottom shelves of the Landmann barbecues are very useful for storing all the accessories you are about to use.
